Thanks for the suggestion, the only downside is that it creates another activity which can throw off our reporting number since this would only be created for visibility.

No, My Summary only displays activities (tasks, phone calls, letters, emails etc).

A workaround: Have a workflow that generates corresponding tasks for open opportunities (& cases) and these open tasks will then show up in 'My Summary' with the regarding field being the opportunity or case.
